Anne-Marie Nichols is a foodie you should know!
Anne-Marie writes from a mom’s perspective about food and cooking. She consults with a number of food brands and she shares recipes and gives tips to women who are trying to lose weight and be healthy.
This busy mom writes a number of different blogs, including This Mama Cooks! On a Diet, This Mama Cooks! Reviews, A Mama’s Rant. Anne-Marie has great recipes and a healthy perspective about food, and we’re happy she took time out to dish with Gloss—we know you’ll love her.
What’s your favorite recipe or favorite food?
I have three different kinds of fave foods. There’s the one I don’t make but love having out. Sushi and Vietnamese food (pho and spring rolls) would cover that. There’s fave food I can make, but I don’t because it’s too decadent. That would be Julia Child’s Chocolate Mousse. I’ve made it many times and grew up eating it, since my mom loved making Julia’s recipes. However, it is so very, very bad for you – tons of sugar, cream, chocolate and eggs. It’s heaven (and hell) in a bowl! Finally, there are the foods I cook up that are good for you and so very delicious. I love making butternut squash soup and ratatouille.
How do you get inspired? Do you have blogs, books or TV shows that give you inspiration to create?
I’ve realized I’m very influenced by television. I love the Food Network and the PBS cooking shows. For the longest time there was just me and my pukey preemie (he’s 9 now) hanging out all day on the couch watching cooking shows. Without Iron Chef, Julia Child, Alton Brown and Rick Bayless, I would have gone mad.
What’s your comfort food?
Rudi’s Bakery flax seed bread, toasted with butter. After having knee surgery a couple of years ago, the hospital gave me morphine. I was hung over and sick to my stomach for two days, and lived off nothing but toast with butter. Each slice is only one Weight Watchers POINT, but don’t ask about the butter.
What do you fix when you are out of time?
Eggs! One whole egg plus three egg whites scrambled, sprinkled with sea salt, then wrapped with organic, mixed baby lettuce in a whole grain Flatout flat bread is an easy meal and I often have this for lunch. The kids love egg sandwiches, but will settle for mac and cheese out of a box. My husband is a firm believer in the power of adding little bits of leftovers to ramen noodles. My husband and I love Huevos Rancheros from Flat Belly Diet recipes.
Favorite cookbook?
Joy of Cooking, because it’s so darn practical and covers it all. Otherwise, I Google everything.
Who would you love to have over for dinner?
Daniel Craig in his James Bond character – he’d mix us drinks.
John Hamm as Don Draper (Mad Men) – he’d bring the booze from a client, of course.
Patrick Stewart as Captain Jean Luc Picard (Star Trek: Next Generation) – he’d transport us to someplace fun to eat and get Starfleet to pay for it.
