Sunday Brunch: Banana Waffles

I admit, it’s a little late for breakfast or brunch. Unless you sleep really, really late.
However, it’s certainly not too late for breakfast-for-dinner. The best part about breakfast food is that you can really eat it at any time throughout the day.
Sure, one could say the same about cold pizza, but since I don’t endorse that, today we’ll talk about breakfast.
To be specific, we’ll talk about waffles. Pancakes are great, but waffles have a little more character and if you own a waffle maker, the clean-up process is easier too.
Banana Waffles
Ingredients
1 1/4 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 pinch ground nutmeg
1 cup 1% milk
1 egg
2 ripe bananas, sliced
Directions
1. Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder, salt and nutmeg. Stir in milk and eggs until mixture is smooth.
2. Spray preheated waffle iron with non-stick cooking spray. Pour two tablespoons of the waffle batter onto the hot waffle iron. Place two slices of banana on top of the batter and then spoon another two tablespoons of batter on top of the banana. Cook until golden brown. Serve hot.
