Yum Recipe: Baked Mashed Potatoes with Sour Cream and Garlic

This is one of my FAVORITE recipes for mashed potatoes. I whip them up for a side with dinner occasionally and often have served it with holiday meals.
If you’re short on time, skip the baking part — they’re still delicious either way!
Get:
1 1/3 cups Sour Cream
1 tablespoon garlic, finely chopped
3 tablespoons butter, melted
8 pounds potatoes (I prefer Yukon Gold) peeled and cut into 1-inch cubes
12 ounces cream cheese, softened and cut into pieces
Prepare:
1. Cook potatoes in large pot of boiling salted water until tender, about 20 minutes.
2. Drain potatoes and return to same pot. Add 12 ounces of cream cheese and mash well.
3. Mix in sour cream and chopped garlic. Season potatoes to taste with salt and pepper.
4. Transfer to 15x10x2-inch glass baking dish. Drizzle with melted butter.
5. Preheat oven to 375 F. Bake potatoes uncovered until heated through, about 30 minutes.
