When we wake up on Saturday or Sunday morning, I often hear, “Hey Mom, can we make pancakes?” They love pancakes…and I prefer to make breakfasts that is both healthy and puts a big smile on their faces.
My secret weapon: Bette’s Oceanview Diner Oatmeal Pancake Mix. The real oatmeal added to the mix gives the pancakes a great texture and I like the fact that even though I’m using a mix, it is made from fresh locally milled flour, baby oats, aluminum-free baking powder, and all-natural ingredients.
I just add organic eggs, milk, and a bit of oil and serve them up with some pure maple syrup and a side of fruit. The leftover pancakes heat up well the next morning too.
To add to a happy pancake themed day, our kids love “The Story of Little Babaji” by Helen Bannerman and illustrated by the amazing Fred Marcellino. At the end of Little Babaji’s journey, that includes a run in with some wild tigers, he goes home to a big dinner of golden pancakes.
Pancakes for dinner? Mmm, maybe tonight.
