If you’ve had the pleasure of visiting one of his restaurants, you probably know that Tom Colicchio creates simple dishes with high-quality ingredients.
Recently, he told Lifescript that simple food is key. For a tasty, flavorful braised side dish, you can use any mushroom, but morels are Colicchio’s favorite. Their surface acts like a sponge for the flavorful sauce that forms while they cook.
Braised Morels
Serves 4
Ingredients:
1 pound fresh morel mushrooms
About 1 1/2 sticks unsalted butter, chopped
Kosher salt and freshly ground black pepper
1 sprig fresh thyme
Directions:
1. Trim off the ends of the stems and clean the mushrooms gently with a damp paper towel.
2. Bring a 1/2-inch of water to a simmer in a large saucepan; reduce the heat to medium-low. Whisk the butter
into the simmering water one piece at a time. Season the resulting sauce with the salt and pepper, then add mushrooms one handful at a time. Remember to spread them out in the pan.
3. Stir to coat mushrooms with sauce then add water so the braising liquid comes about halfway up the mushrooms. Add thyme and gently simmer, stirring occasionally until they are soft and tender.
4. Adjust the seasoning to your taste with salt and pepper, then serve.
