St. Patrick’s Day Recipes: Corned Beef, Irish Soda Bread, Cocktails

It’s not everyday we get to just kick back and have a good old party, so whether you have something festive planned or not, take some of these ideas and throw an impromptu St. Patrick’s Day party for your family or invite over some friends and get together for a much needed night of fun and laughs.

Unlike the classic Corned Beef and Cabbage recipe I shared a few days ago, which takes up to ten days to prepare properly, this round-up of delicious Irish favorites takes little time to whip up but will always result in a tasty, festive evening.

Paula Deen's Easy Corned Beef and Cabbage Recipe

Ingredients

  • 4 slices bacon
  • 4 tablespoons butter
  • 1 head green cabbage, coarsly chopped
  • 1 can corned beef
  • salt and fresh ground pepper

Cooking Directions

  1. Cook the bacon in large pot over medium heat until almost crisp. Remove the bacon from the pot and set aside.
  2. Melt the butter in the pot with the bacon grease.
  3. Add the cabbage, stirring well to coat the cabbage in fat.
  4. Add about 1/3 cup water, and salt and pepper, to taste. Cover pot with a lid, and cook over medium heat for about 10-15 minutes.
  5. Meanwhile, chop the bacon into small pieces.
  6. Remove the lid from the pot, and scatter chunks of corned beef and chopped bacon over top of the cabbage.
  7. Cover and cook until desired doneness. I personally like a little bit of crunch left to the cabbage.
  8. Tip: Cabbage is one of those vegetables that naturally contains water in its leaves. Begin by adding just a small amount of water. As cabbage cooks, if it needs more liquid, then add more water.

Quick Irish Soda Bread Recipe

Ingredients

  • 1 tablespoon baking soda
  • 1 tablespoon sugar
  • 4 cups flour
  • 2 1/3 teaspoons salt
  • 1/4 teaspoon cream of tartar
  • 2 cups buttermilk
  • 1 tablespoon butter

Cooking Directions

  1. Thoroughly combine baking soda, sugar, flour, salt and cream of tartar. Make a well in the center and add buttermilk. Mix lightly and quickly with a fork.
  2. Turn out dough onto a lightly floured board and knead for about one minute. Shape into a circle, about 1 1/2 inch thick. Place on a greased cookie sheet. Slash a large cross in the top.
  3. Bake in a preheated 375°F oven for 40-45 minutes.
  4. Cool on a wire rack. Brush top with butter while still warm. Cool before slicing, and serve.

Irish Potato Casserole Recipe

Ingredients

  • 2 cups peeled and shredded potatoes
  • 1/2 cup melted butter
  • 2 eggs, beaten
  • 1 teaspoon minced onion
  • 1 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/2 cup milk
  • 1/2 cup shredded Sharp Cheddar cheese

Cooking Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Butter a 1.5 quart baking dish.
  2. In a medium bowl, combine the potatoes, butter, eggs, onion, salt and paprika. Mix well.
  3. Place potato mixture into the prepared baking dish and pour milk over top. Bake in the preheated oven for 40 minutes. Sprinkle top with cheese, return to oven and bake until cheese melts and is slightly browned.

Cocktails

What’s St. Patrick’s Day with some green beer and festive cocktails? Try one (or more) of these libations for your St. Patrick’s Day menu:

Emerald Isle

  • 1 oz gin
  • 1 tsp green crème de menthe
  • 2 dashes bitters

Prepare:

  1. Pour the ingredients into a cocktail shaker filled with ice cubes.
  2. Shake well.
  3. Strain into a chilled cocktail glass.

Irish Blond

  • 2 oz. Michael Collins Irish Whiskey
  • 3/4 oz. orange curacao
  • 1/4 oz. Fino sherry
  • 1 dash of orange bitters

Prepare:

  1. Add first four ingredients to a mixing glass.
  2. Add ice to mixing glass. Stir to chill and strain into a chilled martini glass.
  3. Garnish with a flamed orange peel expressed over the cocktail.
Irish Coffee Recipe
Of course, a classic
  • 2 1/2 oz strong, hot coffee
  • 1 1/2 oz Irish whiskey
  • 1 tsp brown sugar
  • 1 oz whipping cream

Prepare:

  1. Pour the coffee, Irish whiskey and brown sugar into an Irish coffee glass or mug.
  2. Stir well.
  3. Float the cream on top.
